Chicken and Quinoa
Quinoa cooked in broth is so delicious. Add vegetables, chicken and healthy fats and it's one heck of a warm salad!

Ingredients


1 cup Quinoa, uncooked
1 1/2 cup Chicken broth (stock)
1 pinch Sea Salt
1 pinch Black pepper
2 tbsp Feta cheese (- add more if you like)
1 tbsp Coconut oil
1 medium pepper(s) Red bell pepper (diced, sauteed)
2 cup Spinach (wilted)
1 bunch Swiss chard (lightly sauteed in butter with bell peppers)
3 green onion (stem) Green onion (green parts, finely chopped)
227 gm Chicken, cooked (chopped)
1/3 cup Walnuts
2 tbsp Extra virgin olive oil
1/4 tsp za'atar

Instructions


  1. Cook the QUINOA

    1. Bring broth to boil. Add quinoa and pinches salt and pepper, reduce heat a little and let it cook for about 5 minutes, until all liquid is absorbed. Turn off heat.
  2. Cook the Vegetables & Chicken

    1. Add 1 cup cooked quinoa and half of the vegetables to a bowl. Top with chopped chicken, walnuts, green onions, feta cheese olive oil, and za'atar, if you like.
