Instructions
Cook the QUINOA
- Bring broth to boil. Add quinoa and pinches salt and pepper, reduce heat a little and let it cook for about 5 minutes, until all liquid is absorbed. Turn off heat.
Cook the Vegetables & Chicken
- Add 1 cup cooked quinoa and half of the vegetables to a bowl. Top with chopped chicken, walnuts, green onions, feta cheese olive oil, and za'atar, if you like.
