3 medium slice
Bacon
454 gm
Chicken breast, boneless, skinless
(cut into tenders)
1/4 tsp
Salt and pepper
1/4 tsp
Garlic powder
1 tbsp
Butter, grass-fed, salted
171 gm
Shiitake mushrooms, raw
(or button mushrooms)
1/2 cup
Chicken broth (stock), low sodium
1/2 cup
Heavy whipping cream, 38% M.F.
1/2 cup
Parmesan cheese, shredded
1 bunch
Parsley, fresh
(chopped; for garnish)
Instructions
Heat large skillet over medium-high heat.
Add three slices of bacon and cook until crisp. Remove the bacon from the pan and crumble then set aside.
You should have about 1 tablespoon of bacon drippings remaining. (Note: If there isn’t about 1 tablespoon of bacon drippings, add 1 tablespoon butter to the pan before adding chicken). To the bacon drippings add in 1 pound boneless skinless chicken breast tenders seasoned with salt, black pepper and garlic powder. Cook about 4 minutes on each side, until juices run clear and the chicken is cooked through.
Remove chicken from the pan and set aside.
Melt butter. Add in mushrooms and cook until tender.
To the pan add chicken broth. Bring to a simmer, then add in heavy whipping cream. Stir to combine. Allow the sauce to simmer for 4-5 minutes to thicken, then add in finely grated parmesan cheese.
Return chicken to pan. Add in crumbled bacon.
Garnish with finely chopped parsley.
