341 gm Chicken thighs, boneless, skinless
341 gm Waitrose Smoked British Thick Back Bacon (chopped)
1 tbsp Ghee
114 gm Red onion (sliced)
114 gm Red bell pepper (sliced)
1 head Lettuce, romaine (leaves pulled a part, wash & pat dry)
4 tbsp Mayonnaise, with avocado oil
3 serving(s) "Easy Keto" Tex Mex Seasoning (serving = teaspoon)

"Easy Keto" Tex Mex Seasoning

1/4 tbsp Chili powder (tbsp)
1/2 tsp Cumin (ground)
1/2 tsp Paprika, smoked
1/4 tsp Onion powder
1/4 tsp Garlic powder
1/4 tsp Hot pepper (chili) flakes
1/4 tsp Himalayan sea salt
1 dash Oregano, ground
1 dash Black pepper
1 dash Cloves
1 dash Cinnamon

Instructions


  1. If using the Easy Keto Tex Mex seasoning, add all of the ingredients to an airtight glass jar and shake vigorously. Store for up to 3 months.
  2. Cut chicken thigh fillets into half inch strips and fry together with the chopped bacon in ghee for 10 minutes
  3. Add the onion, red bell pepper and Tex Mex seasoning and continue to cook for a further 5-8 minutes making sure the chicken is fully cooked through
  4. Serve up the Chicken & Bacon Tex Mex filling in romaine lettuce leaves with 1 tbsp of avocado mayonnaise per serving.

Mix together well and keep in a small glass container with an airtight lid, for up to 3 months.
