Ingredients


2 cup Chicken, ground, lean (diced, from crockpot)
1 cup chopped Cucumber, peeled
1 cup sliced Tomato
1/2 medium White onion
1 clove(s) Garlic (crushed)
1 tsp Sea Salt (to taste)
1 tsp Black pepper (to taste)
1 tsp Lemon juice (to taste)
1 tsp Mint, dried (to taste)

Instructions


Toss all ingredients together in a bowl. This salad is best eaten when fresh, although it does keep for a day or so in the refrigerator.
