2 tbsp Extra virgin olive oil
454 gm Chicken breast, boneless, skinless (chopped into bite size pieces)
1 large potato Sweet potato (spiralized or 1 lb. already spiralized)
2 cup Broccoli, raw
1/2 cup Button mushrooms
2 tbsp Peanut butter, natural
3 tbsp Water
1 tbsp Soy sauce, tamari
1 1/2 tsp Rice vinegar
1 tsp Chili garlic sauce
1 tsp Sesame oil
1 dash Ginger, ground
1 clove(s) Garlic (minced)


  1. Heat olive oil in medium skillet or wok over medium heat. Coat chicken with olive oil, ginger, garlic and cook till done.
  2. Combine peanut butter, sesame oil, tamari, chili sauce, garlic, ginger, water, and rice vinegar and whisk until smooth.
  3. Once the chicken is done, turn the heat down to medium-low, and add broccoli, mushrooms, and sweet potatoes. Add spicy peanut sauce, and combine. Once well coated, turn down the heat and simmer for 20 mins. or until sweet potatoes are done. Enjoy!
