Ingredients


2 bundle Broccolini, baby broccoli (roughly chopped)
2 tbsp Extra virgin olive oil (or butter)
681 gm Chicken breast, boneless, skinless (shredded)
3/4 cup Basil pesto (or coconut pesto)

Instructions


Heat the oil on the bottom of a cast iron pan or skillet on medium heat. When it is ready, add the broccolini, cover and cook for 10-15 minutes, but letting some of the edges brown.

Add the shredded chicken and coconut pesto and stir to combine. Cook for another minute until everything is incorporated.

Serve and enjoy!
