1 chicken breast (196 g) Chicken breast, boneless, skinless, grilled (chopped)
1 1/2 tbsp Mayonnaise (or vegan mayo)
2 tsp Lime juice (fresh)
30 gm Red onion (1 tablespoon)
1 tbsp Cilantro (coriander) (minced)
1/2 tsp Cumin
1/2 tsp Sea salt
1/2 tsp Black pepper

Instructions


1. To cook chicken - set grill to medium-high heat, grill chicken 7-8 minutes then flip and grill an additional 7-8 minutes or until internal temperature reaches 165F. 

2. Chop grilled chicken and combine with remaining ingredients.

3. Serve as sandwich, lettuce wrap (Boston lettuce)  or in the cup of an avocado.
