284 gm Chicken breast, boneless, skinless
2 1/4 tbsp Cilantro (coriander) (chopped)
2 1/4 tbsp Parsley, fresh (chopped)
1/2 pouch (19 gm) Italian dressing, dry mix (simply organic is a good brand)
3/4 tsp Extra virgin olive oil
1/2 medium Lemon
1 cup Rice noodles, dry
1 cup slices Summer squash
1 cup chopped Red bell pepper
1 cup slices Zucchini (chopped)
2 stalk(s) Green onion (green parts only, diced)

Instructions


  1. Add olive oil to a pan with diced vegetables and chicken.
  2. Cook 80 percent of the way, then add cilantro and parsley and juice from the lemon.
  3. Sprinkle Italian dressing mix to the pan, stir one minute.
  4. Make rice noodles- mix in or serve on top.
