1/2 tsp | Sea Salt |

1 medium potato(es) | Sweet potato (grated) |
1 large | Apple (cored and diced) |
1/4 cup | Apple cider |
1 bunch | Kale (chopped) |
1 tbsp | Lemon juice |
In a large skillet, heat olive oil over medium-high heat.
Add the chicken, being sure not to crowd the pan.
Season the chicken with salt and pepper.
Cook until browned on all sides, about 6-8 minutes.
Add the sweet potato, apple and cook, stirring often until the chicken is fully cooked.
Add the apple cider and mix all ingredient together, scraping the bottom of the pan.
Add the kale and cook for another 2 minutes until wilted.
Add a splash of apple cider vinegar and serve immediately.
