Chicken Zucchini Soup to Go

Ingredients


1 tbsp Bouillon Granules (stock powder), Chicken Style
1 small Zucchini (spirilized or peeled into ribbons)
1 cup shredded Chicken, cooked (breast, seasoned with salt and pepper)
1/4 tsp Lime peel (zest)
1 tbsp Lime juice (fresh)
1 dash Salt and pepper (to taste)
1 clove(s) Garlic (minced)
1 drop(s) Lemon grass essential oil
1/4 tsp minced Ginger root
3 head Baby bok choy
4 leaf Basil, fresh
1 green onion (stem) Green onion (thinly sliced)
1/4 tsp Sesame oil
1 tsp Ghee

Instructions


  1. Place a large handful of zucchini spirals/ribbons in the bottom of your jar.
  2. Add in the shredded chicken, then sprinkle in the bouillon powder.
  3. Add the rest of the ingredients. 
  4. When ready to eat, just pour over boiling water and turn a few times to mix the ingredients.
  5. Then let sit for 5 minutes. Enjoy!

 

Chicken Preparation Instructions

  1. Place the chicken in a large pot and season generously with salt and pepper.
  2. Cover chicken in pot with water about 1 inch above the chicken.
  3. Bring chicken to a boil.
  4. Once boiling, reduce heat to simmer and cook the chicken for about 20 minutes, depending on the size of your chicken breast. 
  5. Make sure the internal temperature of the chicken is 165F
  6. Remove the chicken with a slotted spoon and transfer to a plate to shred
  7. Use 2 forks and pull the chicken apart (shredding when the chicken is hot makes it easier to shred)

Chicken

is rich in lean protein and contributes to muscle growth and repair

Zucchini

is high in folate, vitamin C and vitamin K, it contains anti-inflammatory agents and antioxidants
