2 tbsp Coconut oil
1 medium White onion (Minced)
2 clove(s) Garlic (Minced)
2 tbsp Curry powder
1 1/2 cup Chickpeas, boiled (or 15 oz. can, drained and rinsed)
2 cup Diced tomatoes, low sodium, canned (or ripe tomatoes)
1 pinch Sea Salt (To taste)

Instructions


  1. Heat oil in a large pot and sauté onions and garlic until onions are translucent.
  2. Add curry powder to the pot and cook, stirring continuously, for 1 minute or until fragrant.
  3. Add the chickpeas and tomatoes and cook over medium heat stirring occasionally for 20 minutes.
  4. Add sea salt and enjoy!
