Ingredients


3 cup Chickpeas, boiled (You can also use canned)
1/2 cup chopped Tomato
1/2 cup Cucumber (diced)
1/4 cup Red onion (slivered)
1 clove(s) Garlic (minced)
1/4 cup Olive Oil, Extra Virgin
1 tbsp Lemon juice (may substitute with Balsamic vinegar)
1 tbsp Parsley, fresh
1 pinch Salt and pepper (or to taste)

Instructions


  • Stir together all of the ingredients and serve.

    *Optional: Top with crumbed Feta and/or hard boiled egg
