1/2 medium Yellow onion (diced)
2 clove(s) Garlic (minced)
1 piece, 1-inch Ginger root (grated)
1 pepper(s) Red chili pepper (also chile or chilli) (chopped)
1 can(s) (16 oz) Diced tomatoes, canned
1 tbsp Balsamic vinegar
1 pinch Salt and pepper

Instructions


Sauté the onion, garlic and ginger over low-medium heat until translucent, about 5 minutes.

Add the chili and sauté 1 minute.

Add tomatoes, vinegar, sugar, salt and pepper and bring to the boil.

Reduce heat and let simmer about 20-30 minutes, to thicken.
