567 gm Cauliflower (cut into florets)
29 gm Butter, grass-fed, salted
2 tbsp Heavy cream, 38% M.F.
2 tsp Salt and pepper
1/4 tbsp Sun-dried tomato, packed in oil, drained (or 2 tsp of sundried tomato paste)
1 tbsp Ghee
57 gm Green onion
3 tsp, minced Red chili pepper (also chile or chilli)
2 clove(s) Garlic
142 gm Sausage, chorizo, pork and beef (sliced and quartered)
1 tbsp Apple cider vinegar
1/2 whole lemon(s) Lemon juice
30 gm Basil, fresh (chopped)
454 gm Shrimp, cooked
3 tbsp Extra virgin olive oil

GO! :: Instructions

  1. For The Sunblush Mash: add the cauliflower florets to a microwavable bowl with the butter, cover and microwave for 12 mins, re-coating the cauliflower in the butter halfway through.
  2. For The Chorizo & Prawns: chop the scallions, chilli, basil leaves, peel and finely chop the garlic, slice half & quarter the chorizo and set to one side.
  3. Melt the ghee in a skillet over a medium heat, add the scallions and chilli and sauté for a couple of minutes. Add in the chopped chorizo, chopped basil leaves,  press in the garlic, apple cider vinegar, lots of salt and plenty of black pepper, stir and continue to sauté for 5 minutes.
  4. Mash Cont: add the cauliflower to the food processor with the heavy cream, salt, pepper and sun-dried tomatoes then purée, you might have to scrape the sides down a couple of times.
  5. To Serve: add the prawns to the skillet for a couple of minutes to warm up, make sure not to overcook them. Pour in the olive oil, lemon juice, heat through and remove. Divide the Sunblush Mash across 4 dishes and top with the Chilli Chorizo & Prawns. Enjoy!
