2 tbsp Ghee
1/2 tbsp Chili powder
1/2 tbsp Paprika, smoked
1 tsp Himalayan sea salt
1/4 tsp Cayenne pepper
1 tsp Black pepper
4 tbsp Lime peel (zest)

Easy Keto Slaw

355 gm Red cabbage (shredded)
1/4 tsp Himalayan salt
29 gm Zucchini (shredded)
1/4 cup Cilantro (coriander) (chopped)
1 1/2 green onion (stem) Green onion (trimmed & diced)
1 1/2 tbsp Lime juice (fresh)
1/2 tsp Lime peel (zest)
1 clove(s) Garlic (minced)
1/4 tsp Cumin (ground)
1 tbsp Apple cider vinegar
1/2 tbsp Dijon mustard
4 tbsp Extra virgin olive oil (for serving only)

Instructions


  1. Preheat the oven to 150 °C (300 °F)
  2. Mix the ghee and spices together and rub all over the ribs
  3. Ensure they are evenly coated with the chilli lime mix
  4. Place the ribs in an ovenproof dish, cover with foil and bake for 70 minutes
  5. Then remove the foil, turn the ribs and cook for a further 20 minutes uncovered, to crisp the skin
  6. Meanwhile make up the Easy Keto Slaw, and serve

Instructions for "Easy Keto Slaw"

  1. Shred cabbage and place in a strainer in the sink. Sprinkle the salt over and work it in with your hands. Allow to sit for at least 15 minutes to allow the cabbage to get mildly limp

  2. In the meantime, spiralize the zucchini and add to a large bowl with the rest of the ingredients

  3. Add the cabbage and work it all together with your hands, combining well

  4. Serve immediately with 1 tbsp of your choice of oil drizzled over. Or store in an airtight container in the fridge for up to 3 days and only use the oil when serving up
