Ingredients


1 cup Parsley, fresh
1/4 cup Cilantro (coriander)
155 ml Extra virgin olive oil (1/2 cup and 2 tbsp)
1/3 cup Red wine vinegar
1/3 tsp Sea salt
2 clove(s) Garlic
1/2 tsp Cumin
1/2 tsp Red pepper flakes
454 gm Beef, rib eye (2 steaks)
1 tbsp Balsamic vinegar
1 dash Black pepper

Instructions


1. For the Chimichurri:

  • Blend parsley, cilantro, 1/2 cup olive oil, red wine vinegar, 1/2 tsp salt, garlic, cumin and red pepper flakes in a food processor or blender until smooth.


2. For the Steak:

  • Let steaks sit out for about 30 minutes to bring to room temperature before cooking. Season with 1 pinch salt and 1 dash pepper. Drizzle with balsamic vinegar and just enough 2 tbsp olive oil to coat.


3. Heat a grill-pan over medium heat. Add the steaks to the pan and cook for 4-5 minutes, then flip the steaks and cook an additional 5-6 minutes. Avoid moving the steaks around in the pan while cooking.

 

4. Remove from the pan, and let rest about 5 minutes.

 

5. Slice the meat in thin strips and drizzle with the chimichurri sauce. Serve and enjoy!
