200 gm Chicken, cooked
300 gm Cauliflower crumbles/rice
1 tsp Chinese five-spice powder
2 stalk(s) Green onion (chopped)
100 gm Red bell pepper (chopped)
2 tbsp Ghee
2 tbsp Coconut aminos, Coconut Secret (or gluten-free tamari)
2 large Egg (whisked together)
1 clove(s) Garlic (minced)
1 tbsp Sesame oil
1 pinch Salt and pepper (season to taste)

Instructions


  1. Using a food processor, pulse the cauliflower into a "rice" consistency
  2. Heat a skillet over medium-high heat and add the ghee, cauliflower rice, red pepper scallion and chinese five spice covering the surface of the pan
  3. Allow to cook through for 5 minutes, browning the cauliflower slightly (be careful not to burn)
  4. Stir in the cooked chicken, garlic, season with salt and pepper and allow to cook for a further 5 minutes, keep stirring as not to burn rice
  5. Push the rice to one side of pan and add the whisked eggs into the other side of the pan allowing to cook slightly
  6. Combine eggs and rice until eggs are cooked through, add the soy sauce and sesame oil and combine well
  7. Dish up & enjoy!
