Chocolate chips, milk chocolate
(can use mini chocolate chips)
Partly skimmed milk, 2% M.F.
(doesn't have to be 2%)
Vanilla extract, imitation, without alcohol
2 large egg
Mix together dry ingredients in a large bowl.
In another bowl, mix together all wet ingredients.
Pour wet ingredients over dry ingredients and stir just until blended.
Makes approximately 15 muffins.
Bake at 350 degrees for 18-20 minutes or until a toothpick comes out clean.
There is no sugar in this recipe – however, with the banana, they really don’t need sugar at all! If you top them with icing, you would never miss the sugar at all and they taste like a yummy chocolate banana cupcake, but are probably healthier than many muffins you will eat.
