Chocolate Chip Banana Oatmeal Muffins

These warm, soft, chocolate chip banana oatmeal muffins are bursting with hearty oats and delicious mini chocolate chips. Easy and healthy!

Ingredients


1 cup Banana (s) (ripe (mashed))
2 large Egg (large)
114 gm Sugar Free Maple Syrup
1/2 cup Almond milk, vanilla, unsweetened, Silk (unsweetened; (or any other milk))
1 cup Rolled oats- Gluten Free (rolled)
1 1/2 cup Almond flour/meal, Bob's Red Mill
1 tbsp Cinnamon
1 tsp Nutmeg, ground
1 tsp Baking powder
1/2 tsp Baking soda
114 gm dark chocolate chips sugar free
1/4 cup Almond milk, chocolate, unsweetened, Blue Diamond

Instructions


  1.  Preheat oven to 350F. Line a muffin tin with silicone muffin liners or grease.
  2. Mash bananas.  
  3. Add in eggs, maple syrup, and almond milk. Mix until well combined.
  4. Add in oats and let sit 2-3 minutes. (I usually just put away the ingredients I've already used.)
  5. Add in whole wheat pastry flour, cinnamon, baking powder, and baking soda. Mix until just combined.  Fold in chocolate chips.
  6. Divde batter among the muffin tin evenly. Bake for 15-20 minutes or until an inserted toothpick comes out clean.
