4 medium egg Egg (pasture-raised)
4 egg yolk Egg yolk (pasture-raised)
2 tsp Vanilla bean powder
1 tsp Apple cider vinegar
7 tbsp Butter, grass fed, unsalted
7 tbsp Coconut oil
1 cup Coconut flakes, unsweetened
3 tbsp MCT oil
2 tsp MCT oil
5 1/2 tbsp Xylitol (to taste; or erythritol)
1/2 cup Water, filtered
1/2 cup Cacao powder, raw (optional )


1. Add first nine ingredients to a blender, and blend until soft and creamy.
2. Add half of the water or ice, blend, and ice more until you get a yogurt-like consistency. Add more water for a firmer, icier texture.
3. Pour mixture into an ice cream maker and mix per manufacturer instructions.
