2 tbsp Almond flour/meal, Bob's Red Mill
2 tbsp Coconut, shredded
1 tbsp Cocoa powder, unsweetened
1 dash Baking soda
2 tbsp Swerve Sweetener, granular
1 large Egg
1 tbsp Butter, unsalted (or extra virgin coconut oil)
3 drop(s) Stevia sweetener, liquid


  1. Place all the dry ingredients in a mug or a ramekin and combine well.
  2. Add the egg, coconut oil and Stevia and mix well using a fork. Microwave on high for 70-90 seconds.
  3. When done, you can optionally top the mug cake with whipped cream, sour cream or creamed coconut milk.
  4. Tip: for an egg-free option substitute for coconut milk
