1 cup whole Almonds, raw (soaked overnight)
1/4 cup shredded Coconut meat, desiccated, sweetened, shredded
1/2 cup Cocoa powder, unsweetened
3/4 cup Whey protein powder, chocolate
1 tsp Salt
1/2 cup Applesauce, unsweetened
3 1/8 tbsp Coconut milk, sweetened
1/2 cup Coconut flour
2 tbsp Honey
4 tbsp Coconut oil
250 gm Coconut meat, desiccated, toasted (for rolling)

Instructions


Grind soaked almonds in food processor, starting on low and then going to high.

Add all other ingredients for the base and process.

Work the mixture into balls. If the mixture is a little dry, add a little more coconut milk until the mixture is of a workable texture; if it is too wet, add more coconut flour.

Mix together honey, coconut oil and cocoa.

Roll the balls in the chocolate coating, and then roll in coconut.

Place the balls on a tray lined with baking paper and put in the freezer for 1 hour.

To store, keep the balls in an airtight container in the freezer. To serve, remove from freezer and let sit for 5-10 minutes to soften.
