5 biscuit Gluten Free Weet-Bix, original
1 cup Gluten free flour
1 tsp Baking powder
1 cup Coconut, shredded, unsweetened
88 gm Cranberries, dried (about 8 tablespoons)
1/2 cup Dark chocolate chips, vegan
125 gm Butter, vegan
1 tbsp Golden syrup
1 tbsp Maple syrup, pure
1 tbsp Chia seeds
2 1/2 tbsp Water (hot)
1 cup Granulated sugar

Instructions


  1. Preheat the oven to 180ºC (350ºF) and grease a 9-inch x 9-inch square baking pan or dish.
  2. In a small bowl, stir together the chia seeds and hot water. Set aside and allow the seeds to soften and the mixture to thicken into a gel—about 5 minutes.
  3. Crumble the Weet-Bix into a large bowl, then add the gluten-free all-purpose flour, baking powder, dried coconut, dark chocolate chips, and dried cranberries. Mix well to combine.
  4. In a medium-sized bowl, melt the dairy-free spread. Then whisk in the golden syrup, maple syrup, the thickened chia mixture, and sugar. 
  5. Stir the wet mixture into the dry ingredients until well combined.
  6. Pour the batter into the baking pan/dish and smooth it out evenly from edge to edge. Press the batter into the pan/dish by placing a piece of baking paper on top and gently using your hands to smooth out the top. 
  7. Discard the baking paper and place the pan/dish in the oven. Bake for 20 minutes, until golden.
  8. Allow to cool on the stovetop for 10 minutes, then cut into 12 squares while still warm.
  9. For best results, allow the squares to cool completely in the pan/dish before removing.
  10. Once cool, transfer the muesli bars into an airtight container. Store somewhere cool or in the fridge.
