2 square Baking chocolate, unsweetened
1/2 cup Butter, unsalted
1 tsp Vanilla extract, imitation, no alcohol
2 large Egg
1 cup Granulated sugar
1/2 cup All-purpose white flour
1/4 tsp Baking powder
1/4 cup Butter, unsalted (softened - for icing)
1 1/2 cup, sifted Powdered/icing sugar (for icing)
1 tbsp Partly skimmed milk, 2% M.F. (or cream - for icing)
1/2 tsp Peppermint extract (for icing)
1/2 tsp Food colouring, all colours (green, can omit - for icing)


Grease and flour a 9 inch square pan.

Melt together squares of chocolate and butter.

Beat in vanilla and eggs.

Gradually add sugar.

Stir in flour and baking powder (pre-mix these two ingredients first).

Bake 350 degrees for 25 minutes (no more time even if they appear underdone!).

Cool squares.

Blend together icing ingredients and ice squares.

Chill squares.

Melt together 4 squares of chocolate and 1 Tbsp butter and spread evenly over squares and icing.


Cut squares with a knife dipped in boiling water and chill again before lifting out of pan.
