Chocolate Mousse w/ Avocado
The classic mousse gets a couple health upgrades here with extra fiber, potassium and collagen. This is proof that healthy foods don't need to skimp on flavor.

Ingredients


3 avocado(s) Avocado
8 date pitted Medjool date (soak in hot water 5 minutes)
1 pinch Sea Salt
1/2 cup Cacao powder, raw
1/4 cup Macadamia milk
3 tbsp Honey, raw
1 tsp Vanilla extract, pure
1 scoop Protein Powder, Bulletproof Collagen (unflavored)
1 scoop vanilla collagen powder (Ancient Nurtrition brand)

Instructions


In food processor, add avocados and dates. Pulse a few times to break up dates. Add non-dairy milk, honey, vanilla, salt and cacao powder. Blend until smooth. Add collagen powders. Blend again until smooth. You may need to add more non-dairy milk until desired consistency - keep in mind that when you chill the mousse it will firm up some. 

Put mousse in container and chill 1 hour before serving. 

Scoop out 1/4 cup into small bowl and add extra toppings, if desired (unsweetened coconut, cacao nibs, berries, etc.)
