1/4 cup Semisweet chocolate chips
1/4 cup Oat bran, gluten-free, dry
1/3 cup Peanut butter, natural
1/2 cup Rolled oats- Gluten Free (rolled)
1 tsp Vanilla bean paste (or extract)
1/4 cup Walnuts
1/4 cup Coconut, shredded (unsweetened)
1 tbsp Maple syrup

Instructions


  1. Toss all the ingredients in a food processor fitted with a steel blade.
  2. Pulse until the mixture starts to break up and combine, but still has some texture (about 1-2 minutes).
  3. Drizzle in additional maple syrup and pulse to combine, if the mixture appears too dry to roll into a ball.
  4. Roll the mixture into 12-14 balls and place them on a parchment-lined baking sheet.
  5. Place the baking sheet in the freezer and allow the balls to set (about 2 hours minimum).
  6. Once set, transfer the balls into an air-tight container and store them in the freezer.
