1 cup grated Zucchini
1 cup Almond butter
2 large Banana (s) (mashed)
2 large Egg
1 tbsp Honey
1/4 cup Maple syrup, pure
1/2 cup Cocoa powder, unsweetened
1/4 cup Rolled oats- Gluten Free
1/4 cup Chia seeds
2 tsp Vanilla extract, pure
1 tsp Baking powder
1/2 cup Dark chocolate chips

Instructions


  1. Preheat oven to 350F
     
  2. Grease one loaf 9" x 5" loaf pan.
     
  3. Grate the zucchini and squeeze out excess liquid.
     
  4. In your high-speed blender, combine all ingredients EXCEPT the grated zucchini and chocolate chips.
     
  5. Blend until smooth and creamy.
     
  6. Fold in zucchini and chocolate chips. You can add them directly to the blender pitcher or you can transfer mixture to a bowl, if you prefer.
     
  7. Pour the batter into the prepared pan and spread evenly. 
     
  8. Bake in the preheated oven for about 50-60 minutes. A toothpick inserted in the center should come out clean to ensure it is baked through. 
     
  9. Remove from the oven and allow to cool on wire rack for about half hour. Flip onto a cooling rack to finish cooling.
