1. Preheat the oven to 400F
2. Puree the oil, lime, juice and zest, cilantro, jalapeno and garlic in a food processor until smooth.
3. Place the chicken on foil on a baking sheet, pat dry, and season with salt and pepper.
4. Spread the cilantro and lime on top mixture and bake in a preheated 400°F oven (or on the grill) until internal temperature reads 165°F (about 25-35 minutes.)
