454 gm Chicken breast, boneless, skinless (Preferably organic)
1 tbsp Extra virgin olive oil
1 whole lime(s) Lime juice (fresh)
1 whole lime(s) Lime peel (zest)
2 tbsp Cilantro (coriander) (coarsely chopped)
1/2 medium pepper(s) Jalapeno pepper (coarsely chopped (optional))
1 clove(s) Garlic (coarsely chopped)
1/2 tsp Salt
1/2 tsp Black pepper


1. Preheat the oven to 400F

2. Puree the oil, lime, juice and zest, cilantro, jalapeno and garlic in a food processor until smooth.

3. Place the chicken on foil on a baking sheet, pat dry, and season with salt and pepper.

4. Spread the cilantro and lime on top mixture and bake in a preheated 400°F oven (or on the grill) until internal temperature reads 165°F (about 25-35 minutes.)
