1 1/3 kg Butternut squash (peeled, seeded, cut into 1-inch cubes)
1/4 tsp Cinnamon
2 tbsp Coconut oil (melted)
1/8 tsp Ginger, ground
1/4 tsp Sea salt


1. Preheat oven to 400 degrees.

2. Place butternut squash in a large bowl and combine with the coconut oil, cinnamon, ginger and sea salt, stirring to coat evenly.

3. Place in a baking dish and cook for 1 hour, or until completely tender, making sure to stir every 20 minutes or so.

Serve and enjoy!
