|1 1/3 kg||Butternut squash (peeled, seeded, cut into 1-inch cubes)|
|2 tbsp||Coconut oil (melted)|
|1 dash||Ginger, ground|
|1 dash||Sea salt|
1. Preheat oven to 400oF (200oC).
2. Place butternut squash in a large bowl and combine with the coconut oil, cinnamon, ginger, and sea salt, stirring to coat evenly.
3. Place in a baking dish and cook for 1 hour, or until completely tender, making sure to stir every 20 minutes or so.
