1 can (15oz) | Chickpeas, canned, drained (drained, rinsed) |
6 date(s) | Dates (soaked in 1/4 cup boiling water) |
1 tbsp | Chai tea leaves (infused in boiling water with dates) |
1 tsp | Vanilla extract, pure |
2 1/2 tbsp | Coconut oil |
1/3 tsp | Stevia sweetener, powder |
1 1/2 tsp | Cinnamon |
2 1/2 tbsp | Hemp protein powder, vanilla (optional) |
4 tbsp | Coconut flour |
1. Combine the chickpeas, soaked dates, tea, vanilla, coconut oil, stevia powder, cinnamon, and vegan vanilla protein powder in a food processor and purée until smooth.
2. Once the mixture is smooth, add in the coconut flour and purée until it thickens. Once thick, scrape into a rectangular loaf pan and place in the freezer to set.
3. Leave in the freezer until firm, and then transfer to the refrigerator 20-30 minutes before you would like to eat it.
4. Slice into squares and enjoy.
(The bars go soft quickly when left out of the refrigerator/freezer, so keep refrigerated when not eating)
