681 gm Sweet potato (peeled)
2 tbsp Extra virgin olive oil
3 tbsp Maple syrup, pure
1 dash Sea Salt
3/4 tsp Cinnamon


Preheat oven to 400°F.

Cut sweet potatoes in 1" chunks and place into mixing bowl. Add all remaining ingredients and mix well.

Pour mixture into large baking dish line with parchment paper. Bake for 40 minutes or until sweet potatoes are soft.
