Cinnamon Roll in a Mug

2 tbsp Coconut flour
1 tsp Cinnamon
1 pinch Sea salt, fine
1/8 tsp Nutmeg, ground
1/2 tsp Baking powder, gluten-free
1 large egg Egg (or flax eggs)
1 1/2 tbsp Maple syrup, pure
1 tbsp Coconut oil (melted)
1/2 tsp Vanilla extract, pure
1 tbsp Coconut butter (for icing)
1 tbsp Almond milk, unsweetened (for icing)
1 tsp Coconut sugar (for icing)
1/2 tsp Lemon juice (for icing)


Mix all cinnamon roll ingredients in mug, adding the baking powder last.

Microwave on high for 2 minutes.

In the meantime mix all the icing ingredients in a small bowl.

Drizzle icing over hot cinnamon roll.

Serve and enjoy!
