Ingredients


1 large egg Egg
1 tbsp Coconut oil
1 tbsp Coconut milk
2 tsp Maple syrup, pure
1/2 tsp Vanilla extract, pure
4 tsp Coconut flour
1/8 tsp Cinnamon
1/4 tsp Baking soda
1 pinch Salt
1 small Banana (mashed, for streusel)
1/2 tsp Cinnamon (for streusel)

Instructions


Preheat oven to 350 degrees.

Whisk the egg, oil, milk, syrup and vanilla extract in a small bowl.

Stir in the flour, cinnamon, baking soda and salt.

In a separate bowl, combine the mashed banana with the cinnamon.

Grease a ramekin or muffin tin and pour in ⅔ of the batter. Spread the mashed banana in a single layer on top of the batter, then finish with the remaining ⅓ of batter.

Bake for 30 minutes, or until a toothpick comes out clean.
