1 1/2 tbsp Dijon mustard

1 tbsp Extra virgin olive oil
1 pinch Salt and pepper (to taste)
4 cup Baby spinach (or greens of choice; packed)
8 tomato Cherry Tomatoes (halved)

Instructions

  2. Serve over a bed of greens and top with cherry tomatoes.
