1 tsp Extra virgin olive oil
1/2 medium pepper(s) Red bell pepper (chopped)
1/2 medium pepper(s) Yellow bell pepper (chopped)
1 medium Yellow onion (chopped)
454 gm Ground turkey, lean
1 tsp Garlic (minced)
1 can (4oz) Green chili peppers, canned (undrained)
2 can(s) (14oz) Diced tomatoes, canned
2 can (15oz) Black beans, canned (drained, rinsed)
1 1/2 tsp Cumin
1 tsp Chili powder
1 dash Salt and pepper
4 sprig Cilantro (coriander) (garnish; optional)
4 tbsp Greek yogurt, plain, fat-free (topping; optional)

Instructions


  1. Heat olive oil in a stockpot over medium heat. Add bell peppers, onions, and ground turkey. Cook until the turkey has browned.
  2. Add the garlic, chili peppers, diced tomatoes, black beans, cumin, chili powder, salt, and pepper. Stir to combine.
  3. Cover the pot, reduce heat to low, and simmer for 20-30 minutes.
  4. Garnish with cilantro and serve with Greek yogurt. Enjoy!
