1 cup | Egg white (1iquid egg whites or 6 egg whites) |
1/2 tsp | cream of tarter |
4 scoop | Protein Powder, Vega Sport, vanilla |
2 tbsp | Truvia, calorie-free sweetener (more if you are using an unflavored protein powder) |
1/4 cup | Vanilla yogurt, 2-4% M.F. |
1 tsp | Vanilla extract, pure |
1 tbsp | Cinnamon (for filling) |
2 tbsp | Swerve Sweetener, confectioners (for filling) |
1 tbsp | Butter, unsalted (1-2 tbsp for filling) |
Measure out egg whites and place in a bowl, then add cream of tarter, may sub for baking powder of you don't have it.
Using a stand or hand mixer, mix for 5 minutes or so and mix until egg white become stiff and fluffy.
Mix yogurt, vanilla extract, sweetener, and protein powder together in a separate bowl until well combined and smooth.
Next step self in your fluffy egg whites into the yogurt mixture in batches. don't do it all at once. just little by little. We want the mixture to stay fluffy and thick and not get watery.
Once all combined spreed it out on a lined greased baking sheet evenly and then bake at 350 for 10-12 minutes. Keep an eye on it and don't let it over cook.
when done cooking it needs to cool down and sit. may store in fridge until ready to serve.
If cooled completely down, spread butter, confectioner sugar, and cinnamon over the top evenly, then roll form one side all the way to the other side, and slice across for cinnamon rolls, cut to the size you want but usually I get 8 pieces for this recipe.
