Coconut Cauliflower Rice

A great side recipe to replace carbohydrates!


3 cup Cauliflower
2 tbsp Coconut oil
3 tbsp Coconut, shredded, unsweetened (or flakes)
1 tsp Sea Salt


  1. Place cauliflower into a large food processor and process until the size of rice.
  2. Heat coconut oil in a pan over medium-high heat, add cauliflower and shredded coconut, and cook until lightly brown, about 2 or 3 minutes.
  3. Reduce the heat to medium, cover, add salt, and cook until cauliflower is tender, a few more minutes.
  4. You may also brown and cook in the oven, if you prefer a crunchier “rice”.
