Mix together coconut milk, orange juice, water, 1tsp of grated orange peel, maple syrup and vanilla in bowl. Add chia seeds and stir until well combined. Put in the fridge overnight or for at least 2-3 hours. I like to stir mine after the first 15 mins in the fridge to prevent clumping.
After it has set, top with chopped orange, shredded coconut, sliced banana, hemp seeds and leftover ¼ tsp grated orange peel. To make it extra decadent, I like to drizzle 1 Tbsp of coconut milk for a rich and creamy texture treat.
