1. In a food processor, pulse the coconut flakes for 3-5 minutes until it reaches a thick, paste-like texture.
2. Scrape the sides of the bowl to ensure it is thoroughly combined. Add the coconut oil, protein powder, goji berries, maple syrup and vanilla to the food processor and pulse again until combined.
3. Using a rounded tablespoon, roll the “dough” into balls, pressing the mixture firmly so the balls are well formed.
4. Place the balls in an air-tight container and refrigerate.
