Coconut Poached Chicken

2 breast Chicken breast, boneless, skinless (or 2 salmon fillet)
4 clove(s) Garlic (sliced thinly)
1 1/2 cup Coconut milk (homemade or canned)
1 cup Arugula (about a handful OR handful of spinach)


Brown garlic and chicken a little in a saucepan. Add coconut milk, bring to a gentle boil then simmer about 5 minutes.

Remove from heat and cover for about 15-20 minutes. Add greens to wilt.

Slice chicken and drizzle with sauce and wilted greens.

Sprinkle with sea salt and pepper.

Optional: Add chilies or some green thai curry to the coconut milk
