And it’s one of those vegetables that’s worth putting on repeat while it lasts. Zucchini is great for your gut - full of water and fiber, making it easy to digest and perfect for lighter meals when it’s warm outside.
On its own, zucchini has a mild taste—but that’s exactly what makes it so versatile. It takes on flavour beautifully, so don’t be shy with herbs like dill, mint, basil, or parsley. Garlic and chili also work really well here, and a splash of acidity—like lemon juice, apple cider vinegar, or even chopped tomatoes—can bring it to life. And if you want something a bit more rich or satisfying, shaved parmesan, feta, or goat cheese adds a great finishing touch.
