Corn and Red Pepper Sauté

1 tsp Ghee (or extra virgin olive oil)
2 cup Frozen yellow corn kernels
1/2 cup chopped Red bell pepper (diced small)
4 tbsp Water
1/2 tsp Cumin
1/2 tsp Chili powder
1/2 whole lime(s) Lime juice (fresh) (juice from half a lime)
2 tbsp Cilantro (coriander) (finely chopped)
1 pinch Salt (to taste)
1 dash Black pepper (to taste)


Heat ghee in a medium saucepan over medium heat. Add corn and red pepper and sauté for 2 minutes allowing the corn and pepper to soften slightly. Add water and cook for 2 minutes more, or until the water has evaporated. Add spices and cook for 1 minute more. Remove from heat adding lime juice, cilantro, salt and pepper.


Try adding a pinch of smoked paprika for an added dimension.
