1 cup Ham (diced)
1/2 cup White onion (chopped)
1/2 cup diced Celery
1/2 cup chopped Green bell pepper
3 tbsp Margarine
2 cup Chicken broth (stock)
3 potato Potato (cubed)
1 can (15oz) Sweet corn, canned, drained
1 can(13oz) Creamed corn
114 gm Roasted red peppers, canned (or pimientas)
1 cup, shredded Cheddar cheese
1 cup fluid Whipping cream
1 tsp Salt
1 tsp Black pepper


Sauté ham, onion, celery and pepper in margarine in a large saucepan until onion is transluscent. Stir in broth, potatoes, corn and peppers. Simmer for 30 minutes. Add cheese and stir until melted. Blend in cream using and immersion blender. Season with salt and pepper.


To reheat, warm thoroughly but DO NOT BOIL.

Add Sara Lee honey ham, shaved, just before you serve.
