1/3 cup Cottage cheese (2% M.F.)
1 muffin English muffin, whole-wheat
1 medium Radish (sliced thinly on a mandoline, for eyes/ears)
1 small Cucumber (sliced into rounds, for eyes/ears)
2 stalk(s) Chives (for whiskers & mouth)
1 tomato Cherry Tomatoes (cut into triangles for nose)
2 tsp Olive Oil, Extra Virgin
1 pinch Salt and pepper
1/3 tsp Garlic powder
1 dash Paprika


  1. Pull English muffin apart and toast each half. Drizzle both halves with 1 tsp olive oil.
  2. Mix cottage cheese with 1 tsp olive oil and season with garlic powder, paprika, salt and pepper.
  3. Spread cottage cheese on each half, and decorate with whatever vegetables you like (for a savory option) or whatever fruits you like (for a sweet option; see "Notes" below) - or BOTH!



For a sweet version, mix cottage cheese with olive oil, honey, and cinnamon instead of the garlic powder, paprika, salt and pepper.
