Cranberry & Dates Granola Bars

Ingredients


1/2 cup pitted Dates (chopped)
1 cup Orange juice
1/4 cup Peanut butter, smooth (or other nut butter)
1 tsp Vanilla extract, pure
1 tsp Cinnamon
2 cup Oats, large flakes, dry
1/3 cup Wheat germ, crude
2 tbsp Flaxseed meal (ground)
1/4 cup Cranberries, dried (unsweetened)

Instructions


1. Preheat oven to 350F degrees. Line a baking sheet with parchment paper.

 

2. In a small saucepan, combine dates and orange juice. Bring to a gentle simmer over medium heat for about 5 minutes or until very soft. Add peanut butter, vanilla and cinnamon and stir until smooth.

 

3. In a large bowl, combine oats, wheat germ, flaxseed and cranberries. Pour over date mixture and stir to combine. Spread into baking sheet and press down evenly.

 

4. Bake in oven for about 25 minutes or until golden and firm to the touch. Let cool before cutting into bars. Enjoy!
