This is a great substitute for canned cream of "whatever" soup (cream of mushroom or chicken).


2 tbsp Butter, grass-fed, salted
3 tbsp Spelt flour
1/2 cup Chicken broth (stock), low sodium
1/2 cup Partly skimmed milk, 1% M.F.
1 dash Salt
1 dash Black pepper


  1. In a small sauce pan, melt butter over medium-low heat. Whisk in flour and let cook for 1-2 minutes.
  2. Slowly stir in chicken broth, then milk. Whisk until it begins to thicken. Let it simmer for a few minutes. Season with salt and pepper.
