Creamy Kale

Ingredients


2 tbsp Grapeseed oil
1 bunch Kale (stems removed and cut into pieces)
1/2 tsp Salt
1/2 tsp Garlic powder
1/2 tsp Nutmeg, ground
1 dash Black pepper
1 cup Coconut milk, sweetened (canned, full fat)

Instructions


  1. Melt 2 tablespoons of oil in a large pan over medium heat.
  2. Add the kale and sauté for about 6 minutes, or until it starts to soften.
  3. Add the salt, garlic powder, nutmeg, and black pepper. Stir to coat the kale.
  4. Pour in the coconut milk and stir to incorporate.
  5. Simmer for 10 minutes while stirring occasionally. Remove from heat once the kale is completely wilted and the coconut milk has thickened.  Add in more kale depending on how creamy you prefer.
