Ingredients


1 cup Baby spinach (or handful)
1 small potato Sweet potato (cooked)
1 medium Orange (peeled)
1/2 cup Greek yogurt, plain, 2% M.F.
2 date pitted Medjool date (optional - for sweetness)
1 tsp Turmeric, ground
1/2 cup Coconut milk, sweetened

Instructions


1. Preheat oven to 400oF (205oC). Add chopped sweet potato and roast until fork-tender, about 35-40 mins. Allow to cool.

2. In a high-speed blender, add the ingredients, in order and blend until smooth.

3. Add in 1 cup of water and blend once again.

Serve and enjoy!
