1 small potato | Sweet potato (cooked) |
1 medium | Orange (peeled) |
1/2 cup | Greek yogurt, plain, 2% M.F. |
2 date pitted | Medjool date (optional - for sweetness) |
1 tsp | Turmeric, ground |
1/2 cup | Coconut milk, sweetened |
1. Preheat oven to 400oF (205oC). Add chopped sweet potato and roast until fork-tender, about 35-40 mins. Allow to cool.
2. In a high-speed blender, add the ingredients, in order and blend until smooth.
3. Add in 1 cup of water and blend once again.
