1. Soak cashews in water for a few minutes, few hours, or overnight. Rinse and strain.
2. Remove seeds and stem from red bell pepper.
3. Wash pepper and carrot.
4. In a food processor combine bell pepper, carrot, cashews, juice of lemon, apple cider vinegar, salt, and garlic clove. Blend until well combined.
5. Cut red and green onions into small pieces.
6. Chop walnuts
7. Combine all ingredients and mix it up with a spoon. Enjoy
