1 breast Chicken breast, boneless, skinless (or 2 thighs or 1 can of chickpeas, drained and rinsed)
1 medium Zucchini
1 tbsp Garam masala (or curry powder)
1 tsp Hot pepper (chili) flakes
1 clove(s) Garlic (minced)
2 medium Tomato (diced or 1/2 small can tomatoes)
3 tbsp Coconut cream


Heat a bit of coconut oil over medium-high heat and brown chicken (unless you’re using chickpeas). add zucchini for a few minutes to brown.

Stir in garam marsala, chili flakes and garlic. cook about 1 minute.

Add tomatoes and simmer for 5 minutes, or until everything is cooked. stir in the coconut cream. Serve with brown rice or “cauliflower rice”.
